Italian Style Leg of Lamb

Ingredients:

1 red pepper, halved, deseeded and cut into chunks
1 x 4lb leg of lamb
1 yellow pepper, halved, deseeded and cut into chunks
1kg potatoes, peeled, cut in half, and parboiled
2 sprigs of rosemary, leaves stripped
5 cloves of garlic
a handful of black olives, stoned and roughly chopped
olive oil
sea salt and freshly ground black pepper

Directions:

Preheat your oven to 425 F
Rub the leg of lamb with olive oil and season well with salt and pepper. Place in a roasting tray and pop into your preheated oven for 30 minutes.
Take the leg of lamb out of the oven and remove it from the tray. Add the potatoes to the tray with the rosemary sprigs, peppers, olives and unpeeled garlic cloves. Toss together in the meat juices. Season with salt and pepper, put the lamb back in the tray.
The lamb should be perfectly cooked after this time, so remove it from the oven and put to one side to rent. However, feel free to cook for longer if you prefer your meat well done. If the potatoes need crisping up once you have removed your meat, put the
